#9 QUICK MEAL: MULTI-COLOUR PASTA



This is a very simply recipe and you can basically use any veg you like and leave out whatever you don't like of this. I used smoked bacon because we had some at home and I think it goes really well with the tomatoes but you can certainly leave that out aswell or use ham instead or whatever you have.



Multi-Colour Pasta
(for 2 servings)
1/4 red pepper
1/4 green pepper
1/3 courgette (I used a yellow one)

1/2 onion
1 glove of garlic
2 tomatoes
2 strips of smoked bacon
(mint, basil, thyme)

200 g spaghetti (or anything you like)

simply chop all the veg and the bacon
so they're all about the same size bits.
you can choose whatever size you want basically.

bring water to the boil and cook the pasta.
while doing that, heat a non-sticky pan
and stir fry all the veg and the bacon except for the tomatoes.
do that for about 5 minutes.
after that add the chopped tomatoes and leave to simmer
for another 5-ish minutes.
add herbs if you like and salt.

the pasta should be cooked by now.
drain the pasta and serve with the sauce.
