it is now spring or at least trying to be which weather wise is not particularly working in my part of the world even though it has been better today. however, whenever the calendar says it's spring I try to get back into a healthier lifestyle not that I live or eat particularly unhealthy in the colder months but I just tend to have more motivation for change when the days get longer. I am by no means an expert when it comes to diet and exercise well especially exercise but I can try my best right. this means I am not telling anyone what's good for them or not but if you fancy reading about what I do you can do so here.
in the attempt to be healthier I am introducing more and more healthy recipes into my eating/cooking/preparing routine and there are a few I really want to share with you and there will be even more in the future I am sure. they are nothing special or extremely difficult to make as the healthiest of foods often rely on simplicity and fresh produce so fear not people who are afraid of the science of cooking this is not the most complex part on the menu.
so after the longest introduction ever we are now moving on to the actual recipe. this is something I came up with yesterday and put together in about 20 minutes (thinking time included) it's lovely as a dinner and I guarantee you it will fill you up and you won't be missing out on taste either. you can of course leave out the bacon if you want it to be really healthy, I added it because well, I'm austrian and we love bacon and sometimes I just fancy it on my salad. don't blame you if you don't though.
Mixed Carrot Salad with Egg
for one person
2 hands full of mixed lettuce (or what you prefer)
1 carrot (grated)
pickled sweet chili pepper (or just normal pepper)
1 hard boiled egg
few pieces of streaky bacon (leave out if you really want it to be healthy)
1 tbsp yogurt
1tbsp water
1 tsp pumpkin seed oil/any oil you like
1 tsp vinegar
salt
herbs
if you go for the bacon option then heat a pan and fry the bacon without adding any extra fat, it will lose it's own fat and then you can put it on kitchen roll to rest.
boil your egg for about 10 minutes depending on the size. (if you want it to be runny then go for it, mine wasn't runny on purpose I was just very hungry).
wash your salad an grate up the carrot. cut your pepper into pieces.
mix together all the ingredients for the dressing
arrange the lettuce in a bowl and mix in the carrot, put on half of the dressing. sprinkle the peppers and the pieces of bacon on top, cut your egg into quarters and arrange on top. add the rest of the dressing and you can serve it all up.
